If you're looking for other really interesting concepts of Superman, I can suggest a few. Perhaps my favourite is "Superman: Red Son" which is a self contained story like All Star Superman but with really fascinating twists on the character.
The other is actually just a short story in a comic book but you can find it by searching for "Superman and the Jumper". It's a story about Superman happening upon someone who wants to jump off a building to their death. Probably one of the most powerful ways to simplify Superman down to who he truly is.

I just finished reading "Superman and the Jumper." I'm crying right now. Superman can be so good. It was so short but the pacing, the way the panels moved, the art, the reflections of Superman, the emotion in his usually stoic face half turned away in pain. There was so much emotion packed there and it was only a few pages long. This is why I love Superman. Thank you for sharing with me :')

Superman: Red Son is actually one of the inspirations for Henry Cavill and Man of Steel. It’s about a world where Superman lands in Ukraine during Soviet Russia instead of Smallville Kansas. What’s fascinating about it is that he remains very much the same character, it’s just that how he goes about things is somewhat different.

Smallville came out in 2001/02 and ran until 2011. It started as a WB show and became a CW show after. I've only written about that show once. Now I'm going to do a deeper dive.
Superman and Lois is based on the CW shows that you're talking about and started in 2021.
Most of the CW shows you take issue with for DC shows, though this might not give you a reason for you to like it, owe their popularity to Smallville. It made the kind of special effects that The Flash and Arrow and all them use possible. Without Smallville, the CW shows don't happen.
As for comic suggestions, probably the best one aside from what I've already offered is Kingdom Come. It's another self contained story. The premise is that a new generation of superheroes come up and are more violent, but no one in the public seems to mind. Superman quits being a superhero over a particularly violent incident and the story picks up 10 years later when the new superheroes have gone too far and people try to convince Superman to come back and become a hero again so he can keep these violent superheroes in line.
